Plant oils mainly consist of unsaturated fats, with the polyunsaturated (linoleic) fat content usually being higher than the monounsaturated (oleic) fat content. High oleic, pronounced hi-oh-lay-ick, sunflower seeds have a higher content of monounsaturated fats, giving them a better shelf-life stability.
